Tender coconut: how to choose a good one

Sweet or tangy, more water or more malai: what to ask for.

Tender coconuts are not all the same, and a good vendor can tell the difference by looking and listening.

Young green coconuts, about six or seven months old, have the most water and only a thin, jelly-like malai. They are slightly sweet and very refreshing. Older ones have less water, often a little tangy, and a thicker layer of soft white flesh that is lovely to eat with a spoon.

Shake the coconut near your ear. A full one makes very little sound; a lot of sloshing means it has lost water or is older. The skin should be bright green with no cracks, and the stem end should look fresh, not dried.

At our counter, tell us whether you want more water or more malai, sweet or tangy, and we will pick accordingly. We buy coconuts from farmers in the Godavari delta twice a week and keep them in the shade, never in a fridge, which spoils the taste.
