Ustad Rafiq learnt kacchi biryani from his father, who cooked for weddings in the Old City. He still seals every deg with dough by hand and decides when it is ready by tapping the lid and listening.

Kacchi means raw. The meat goes into the pot raw with the rice and cooks on dum in its own juices, instead of being cooked first as in pakki biryani.
The biryani itself is medium. The heat is in the salan; ask for it on the side or leave it out, and we can send extra raita.
A full deg serves 10 adults, about 250 g of rice and two pieces each. Order party degs 24 hours ahead; they cost ₹3,200 for chicken and ₹4,200 for mutton.
