Jowar flour, 1 kg
White jowar from farms on the Maharashtra border near Burhanpur, cleaned and ground fine. Pat it into bhakri with warm water, as jowar has no gluten and will not roll like wheat. Mild and slightly sweet. Ground on order in small lots.

Millet flours
Bajra flour, 1 kg
Pearl millet from Dhar and Ratlam, ground in lots of 20 kg so it never sits for long. Bajra flour has more oil than wheat and turns bitter if kept, so use it within three weeks. Makes the winter bajre ki roti and bajra raab of Malwa.
