What comes in the box, how to store it and a simple first-week plan for a family new to small millets.

If you have just placed your first order, here is what to expect when it arrives and how we suggest starting.
Orders are cleaned, weighed and packed on the day we receive them. In Mysuru they arrive the next morning; across India, in three to five days by courier. Each grain comes in a resealable pouch with the millet’s name in English and Kannada, the harvest month, the farmer group and the water ratio printed on the back. Mixes carry the full ingredient list, which is usually only grains, pulses and spices.
When the box arrives, empty the grains into clean, dry airtight jars, one per millet, and label them. Keep the jars away from the stove. Grains keep for about four months this way, and we suggest finishing a pack within that time.
For the first week, start with one meal a day. Day one, little millet pongal from our mix, which most families like at once. Day two, foxtail millet in place of rice with sambar. Day three, a kodo millet dosa from batter or our instant mix. Then repeat with the millets you liked best. Cook the grain fresh rather than storing it overnight, because cooked millet dries out faster than rice. If anything arrives damaged, send a photo on WhatsApp and we replace it. Unopened packs can be returned within seven days. And if you are unsure what to cook, ask us; Kavya at the store answers recipe questions every afternoon.
