Light, snow-white walnut halves from this year’s crop, shelled by hand in Srinagar so they stay whole. Sweet, with none of the bitterness of older stock. 500 g in a resealable pouch. Keep them in the fridge after opening and use within three months.

Paper-shell walnuts

Thin-shelled walnuts from orchards near Shopian, so the shell cracks between two walnuts in your hand. Harvested in September, sun-dried and graded. One kilo makes about 450 g of kernels. They keep for months in the shell in a cool cupboard.
