Opening your first parcel from Peddamma’s kitchen

Oil on the lid, a cloth under the cap and a lot of chilli: what arrives in the box and what to do first.

For many customers, their first parcel from us is also their first jar of real Andhra pickle, and a few things can come as a surprise.

Each jar is glass, sealed with a layer of cotton cloth under the lid and a band of tape around it. The jar sits inside a corrugated sleeve, and every parcel is wrapped in a plastic bag before it goes in the box. Pickle travels in hot lorries and cold cargo holds, and the oil expands and contracts. A little oil on the outside of the jar or inside the plastic bag is normal and not a sign of damage. A cracked jar, which happens rarely, should be photographed and sent to us the same day.

When you open the jar, you will see a thick layer of oil on top. Do not pour it away. It protects the pickle from air and moisture and is part of the taste. Stir the jar once from the bottom with a dry spoon, so the masala that has settled mixes back through.

The heat may also surprise you. Start with half a teaspoon mixed into a bowl of rice with ghee, not a spoonful on the side of the plate. Store the jar in a cupboard away from the stove, at room temperature. Only the green chilli and mango pickle needs the fridge. If you want to share a jar, transfer some into a clean, dry steel or glass container rather than taking the whole jar to the table every day.
