Ghee made the bilona way: whole Gir cow milk set to curd overnight, churned at dawn into makhan, and the makhan cooked slowly over a wood fire until it smells nutty. About 14 litres of milk go into this jar. Sets grainy in winter, liquid in summer. Ships in a sealed glass jar.

The same ghee as our 500 ml jar, in a one-litre glass jar for families who cook with it every day. Around 28 litres of our milk go into each litre. Every jar carries the batch date and the cooking day. Keeps for nine months at room temperature with a dry spoon.
