A cold slice can be almost as good as fresh, if you skip the microwave.

Leftover pizza is not a tragedy. The trick is to crisp the base while warming the top, which a microwave cannot do.
Use a heavy frying pan. Heat it on medium for two minutes, put the slices in dry, and cover the pan with a lid. After two minutes the base will be crisp. Add a few drops of water to the side of the pan, not on the pizza, and cover again for one more minute. The steam melts the cheese.
An oven or an air fryer also works. Heat it to 220 °C and bake the slices on a tray for five or six minutes. Do not wrap them in foil, which traps steam and makes the crust soggy.
Pizzas with fresh toppings added after baking, like our tomato and stracciatella, are best eaten cold the next day, straight from the fridge. Reheating turns the fresh cheese into a puddle. Pizza keeps for two days in a closed box in the fridge.
