Inside a wedding cake week

Five days, three tiers and about two hundred sugar petals.

A wedding cake starts months before the bake, at the tasting. Once the couple chooses flavours and approves the sketch, the real work begins five days before the wedding.

On day one, Nithya makes the sugar flowers. Each rose is built petal by petal from gumpaste, wired, dried overnight and dusted with colour. A cascade can take two hundred petals and a full day.

On day three we bake every sponge and let it rest overnight wrapped in film, which makes it easier to level and stack. Day four is for filling, crumb coating and chilling each tier, then covering it in its final buttercream or fondant. Wooden dowels go into the lower tiers to carry the weight above.

On the wedding day the tiers travel separately in our chilled van. Two of us stack them at the venue, fix the flowers and check the table is level. We leave a small box of spare flowers and a cutting guide with the caterer, so the couple can enjoy the cake rather than worry about it.
