Our everyday loaf: stone-milled wheat with 10% rye, mixed with our starter in the afternoon, shaped at night and baked at 4 am after 36 hours. A dark, blistered crust and an open, glossy crumb. Keeps for four days in a cloth bag. About 800 g, baked Tuesday to Sunday.

Seeded multigrain loaf
The country dough with a soaker of sunflower, sesame, flax and foxtail millet folded in, then rolled in oats before the final proof. The seeds are soaked overnight so the loaf stays moist for five days. About 850 g. Good toasted with butter and our mango jam.
