Our tea-room chai blend: strong Assam CTC with dried ginger, green cardamom, cinnamon, cloves and black pepper. Boil 2 teaspoons in 100 ml water for 2 minutes, add 100 ml milk and sugar, and simmer until it rises. Makes about 80 cups.
